What am I doing to make this week easier? This is a question you should ask yourself every Sunday.
Tomorrow starts my first day of my sophomore year of college. Since I know the drill from last year, I have set goals of how I’d like this year to be different. As far as food goes, I’d like to stay strict with avoiding grains, legumes, sugar, and processed foods. I did this last year, but my planning wasn’t as efficient. In order to do this more effectively and maximize my time, meal prepping is going to be crucial!
It’s Sunday, and what you do today can affect how the rest of your week will play out. Here’s some things I did today to prep for the week!
- I made my Paleo Chicken Salad. This will probably be lunch/dinner a few days this week. Since it is full of vegetables, fresh herbs, and good protein, I feel it is a pretty balanced meal.
- I made pork tenderloin (recipe not yet posted!). In order to make sure it’s fresh, I put half of it in the freezer, and will most likely use it next week!
- I made sure I bought my basics. Eggs for breakfast (avocado in egg), spinach for my omelets and salads, nut butter for snacking (make your own!), a few different vegetables, apples, sausage without additives, and kombucha tea.
- I have frozen food in case I run out! If I finish my chicken salad and pork before next Sunday, I’m prepared. I have individually wrapped grass fed hamburgers and pork chops.
My basics change depending on what’s in season, prices, and what I’m in the mood for lately. For instance, sausage was never a favorite of mine, but now that I can get my hands on some Paleo-friendly sausage, I’m loving it! And next week I may stick to more fish than red meat. Each weekend I make chicken soup with homemade bone both. I can heat it up quick when I’m busy. It’s so nourishing and I can usually get 6-7 meals worth. I just stumbled across your blog via Instagram. I’m really enjoying it! Thanks for the motivation:)
