Sometimes in the mornings, we don’t have time to stand over the stove to scramble our eggs. So when you’re in a hurry, throw these eggs in the oven, let em cook and you can even take them to-go! It’s as simple as lining a muffin tin, spraying down some oil, cracking the eggs, and baking.
So why should you be eating more eggs? They’re a filling breakfast, and they are a great source of protein, good fats, and vitamins. Very few foods share the same nutrient makeup available in one single egg.
But remember all eggs aren’t created equal. When you buy cheap eggs from a big chain grocery store, chances are the mother chicken was caged up, sick, and eating grains. A sick mother creates a sick egg, correct? So think twice about buying the cheapest dozen of eggs. I personally like to get mine from the farmer’s market, or if not I get cage- free eggs.
You can tell by the color of your yolk if your eggs are healthy or not. I actually feel better eating eggs with shells that are all a range of colors and sizes. It feels more real to me. When I went on a beach trip with some of my friends, they were confused why my Farmer’s market eggs had greenish shells and why the yolks were so yellow! They’d never seen real eggs before. So find someone locally with cage free chickens or buy some quality eggs from the store! But usually the cheaper you buy, the less nutrients.

- Salt and Pepper
- Preheat the oven to 350 degrees.
- Line a muffin tin and cover liners with coconut oil.
- Crack eggs into liners and top with salt and pepper.
- Cook for 12-14 minutes, depending on how you like your yolk.
