As a busy busy girl lately, I need quick and easy meals! Even when I’m not busy, sometimes I just don’t want to do the dishes (lazy girl!) So that’s when recipes like this come in. Today I am sharing a Paleo Breakfast Casesrole.
The only thing that makes this recipe different from a frittata is that I put it in a thicker dish, so it seemed more suitable to call it a casserole. When a dish is filled with this much color, you know that it is healthy and has a great variety of nutrients. I recently have become a nutrient seeker. I’ve been Paleo for over 2 years now, but sometimes I found myself just focusing on the foods I couldn’t eat and thinking that was enough. Now I want to focus on filling my body with the best possible ingredients every single day. There is always room for improvement.
On another note, if you spend the money to eat a high-quality, nutrient dense diet, you won’t have to pay for medical bills later. The few extra dollars on grass-fed beef versus conventional meat is worth the difference in nutrients. And for me, I don’t like to support the conventional meat industry anyways! If we all support farmers who farm their animals with care, we will make a huge difference. Your purchase matters!
The great thing about this recipe is it has carbs from the sweet potatoes and spinach. Then it also has protein and healthy fats from the ground meat and the eggs. I use ground turkey lately, because I haven’t been “feeling” beef, but you can use either. I also buy my eggs from the Farmer’s Market (90% of the time), or I buy the highest quality I can find at Whole Foods. Sweet potatoes are inexpensive and extremely healthy! I find that women (and some men too) need to remember to get carbs in different ways, like sweet potatoes and fruit.
- 12 eggs
- 1 large sweet potato
- 1/2 lb ground meat, turkey or beef
- 1/2 cup spinach
- Salt and pepper, to taste
- Coconut oil, for coating
- Preheat the oven to 350 F. Coat a 9 x 9 baking tray with coconut oil.
- Cook ground meat in a skillet with coconut oil, until browned. Season well throughout cooking.
- Cut the sweet potato into slices about 1/4 inch thick. Layer the slices on the baking tray.
- Top the sweet potatoes with the ground meat, and raw spinach.
- Whisk 12 eggs well. Season with salt and pepper to taste. Pour to cover the mixture completely.
- Bake in the oven for 40-45 minutes, or until sweet potatoes have softened and eggs are cooked through.
