2cupstrinityequal parts chopped onion, green bell pepper, and celery
¼jalapenofinely chopped
2-4garlic clovesminced
2cupsof boiled crawfish tails
1 8ozpackage of cream cheese
½Tablespoonof Cajun seasoninguse if not pre-seasoned
Salt and pepperto taste
Instructions
In a small pot, heat butter on medium heat. Add trinity and jalapeño and cook until onions are almost translucent. Add minced garlic and continue to cook in the pot and stir.
Add the crawfish tails and stir, just until warm, because they are already cooked.
Add cream cheese to the pot, and stir until melted (about 3-5 minutes). Add salt, pepper, and optional Cajun seasoning. Serve hot or cold!
Notes
Trinity or "The Holy Trinity" is a mixture of chopped onion, green bell pepper, and celery. It's a must in Cajun cooking and you will see it in some of my recipes! I served mine with gluten free bagel chips, but it was also good with plantain chips.
